Wonton soup with noodles sets my heart singing, and when the wontons are filled with shrimp (my favorite) and the noodles remain bright and chewy, I'm in heaven. Marc, of No Recipes, reveals the secrets to making an extraordinary, authentically Hong Kong version of this classic soup: presoaking the shrimp with an alkali in the water, and setting the noodles on top of the wontons so they don't absorb too much of the broth. I can't wait to try this.
