White bean soup with red pepper coulis, from Thyme For Cooking
On my main blog, The Perfect Pantry, I'm always singing the praises of a well-stocked pantry. If you have one, and also have a red bell pepper (or a jar of store-bought roasted red peppers), you can make Thyme For Cooking's white bean soup with red pepper coulis. The contrast between creamy white beans and sweet red peppers really appeals to me, and Katie's photo shows how much fun you can have with the colors, too. Once the coulis is made -- and you can make it ahead, even a couple of days ahead -- the soup comes together quickly.

this is making me hungry! I still crave a white bean & rosemary salad I got off the salad bar at Whole Foods, and I wonder if I could make it into a soup. In the meantime, I'll try this.

Kirsten, of course you could turn the salad into a soup, with a blender or immersion blender and some sort of liquid (chicken or vegetable stock, or white wine, or water). Maybe some parmesan cheese on top? Voila, it's soup!
