If you have one, and also have a red bell pepper (or a jar of store-bought roasted red peppers), you can make Thyme For Cooking's white bean soup with red pepper coulis. The contrast between creamy white beans and sweet red peppers really appeals to me, and Katie's photo shows how much fun you can have with the colors, too. Once the coulis is made -- and you can make it ahead, even a couple of days ahead -- the soup comes together quickly.
