Rustic lentil soup, from Soup Addict
In my pantry I keep jars of lentils in every color: brown, red, yellow, green, and white lentils I found at a gourmet grocery store. This rustic lentil soup, from Soup Addict, calls for a combination of red and green, but I think you could use any type of lentils in this recipe. Extra goodness comes from vegetables, pancetta (optional), and a secret ingredient I'll let you discover when you see the recipe. (Karen gives suggestions for making this naturally gluten-free soup vegan, too.) Lentil soup is perfect for this time of year, and it's a great make-ahead dish you can freeze in small portions for workday lunches.
