Roasted butternut squash soup, from Recipe Girl (on Soup Chick).

In this recipe for roasted butternut squash soup with apples and garam masala, an Indian spice blend, Lori of Recipe Girl puts her own spin on the classic autumn combination of vegetable and fruit. Roasting the squash, and sautéing the apples in wine, then bringing the two together, builds layers of naturally sweet, earthy flavor. (And if that's not enough goodness, you'll also add a bit of maple syrup!) If you can't find garam masala, it's easy to make your own from spices you probably already have on your spice rack. ATasteofMadness, doesn't this look like a wonderful variation of the classic squash soup? Garam masala is easy to find at Indian markets, and also through spice shops like Penzeys. It's also easy to make at home.
