Floribean chicken chili, from The Perfect Pantry.

The name Floribean chicken chili evokes Miami's hot colors, cool beaches and tropical flavors, and this recipe from The Perfect Pantry has it all. I love the combination of sweet and hot and vinegar, from molasses and honey, chipotle peppers in adobo, and lime. Add some musky spices like cumin, and fresh cilantro, and top it all with mango salsa fresca, and you'll swear you're on the beach. If there's such a thing as a summer chili, this is it.

Lydia - this sounds fantastic - love the sweet and spicy undertones in this chili recipe, and the mango salsa sounds perfect to top it off with. I'd love to serve this on top of a baked sweet potato.

This made a wonderful veg chili last night. No chicken, a veg sausage, some fresh chiles and all the seasonings, using 2 cups of water for the broth. I'm waiting for the 'day after' serving -- those complex flavors will only get better!
