Baked potato soup, from Skinnytaste

Baked potato soup, from Skinny Taste (on Soup Chick).

Few soups soothe the spirit more than potato soup, except, maybe, potato soup with bacon and cheese on top. Gina of Skinnytaste has cleverly lightened up her creamy baked potato soup with cauliflower purée. Doesn't that sound like a wonderful combination? Even I, a confirmed not-so-crazy-about-cauliflower person, can't wait to try this soup. You can omit the bacon and cheese topping, but I won't.

Gina, can't wait to try this one. I think using cauliflower as a thickener is so clever.
