Haven't you always wanted to live in New Mexico, just so you could cook with an endless supply of the world famous Hatch chile peppers? No? Well, I have, and I'm lucky to have friends who live there and send packages to Rhode Island every now and then. As you know, I'm a huge fan of summertime slow cooker cooking. Put that together with my chile addiction, and you can see why this slow cooker roasted Hatch chile stew with sweet potato, corn and lime, from Gluten-free Goddess, struck a chord with me. I must admit that I'm a bit scared of Hatch green chiles, but this stew from Karina looks fabulous!! :-) So colorful and flavorful.

Shirley, Hatch chiles can be mild or hot, so stick with the mild ones, and there's nothing to fear!
