When I think of sofrito, the ubiquitous tomato-onion-pepper-sazon condiment, I remember the Puerto Rican friends in Boston's South End who first taught me about the cooking of their island. And when I think of Puerto Rico, I picture bright sunshine, warm weather, and glorious beaches. So, even though the name says stew, to me this sofrito chicken stew from Skinnytaste sounds like a perfect dish for summer, and I can just about taste the leftovers, cold and packed into a picnic basket with some crusty bread to mop up the juices. My lips are smacking.
