This slow cooker salsa chicken and black bean soup starts with dry black beans, and cooks for "a crazy long time" according to Stephanie of A Year of Slow Cooking. Perfect if you're going to be out all day, this soup has become a new family favorite in her house, and I'm sure the classic combination of black beans, salsa and chicken will be a favorite with your family, too. The recipe calls for store-bought salsa; you can substitute your own homemade, or stick with store-bought, in mild or super-spicy.
Remember: Any slow cooker soup also can be made the old-fangled way, in a heavy pot on the stove top.
