This slow cooker salsa chicken and black bean soup starts with dry black beans, and cooks for "a crazy long time" according to Stephanie of A Year of Slow Cooking. Perfect if you're going to be out all day, this soup has become a new family favorite in her house, and I'm sure the classic combination of black beans, salsa and chicken will be a favorite with your family, too. I made this soup today, I know you don't make soup when it's 90+ outside but I did. I thought it was really delicious and very easy to make. It will definitely be one I make again.

Shirley, I do love my slow cooker for hot-weather cooking. But the heat doesn't really make me want to cook anything!
