Seven soups every Saturday: zucchini soup recipes

The zucchini are coming! The zucchini are coming! It's that time of year. Gardens everywhere are beginning to spit out fully formed zucchini faster than anyone could possibly cook them. You can never have too many new ideas, so why not start with soup? Many zucchini soups freeze well, so you can serve them later in the season when the zucchini glut has subsided.

Hi Lydia--LOL on the zucchini coming!! I love them, but don't have a garden here in the woods, so I'm not overrun with them. ;-) All these recipes sound great. Off to check out the shooters, and thanks so much for including my Slow Cooker Potato-Zucchini Soup!

Shirley, I don't grow zucchini, either, but I have friends who do. Yesterday I was driving home, and saw a huge pile of zucchini just sitting in front of someone's house, on the road -- free to any takers!

I've been getting lots of zucchini and summer squash in my weekly CSA Box and have been grilling and stir-frying them. I'll have to try making soup with it next time. Thanks for all the great ideas.
