Estonian zucchini and smoked cheese soup recipe, from Nami-Nami
Without Pille's wonderful English-language blog, Nami-Nami, most of us would know far less than we should about Estonian cuisine. I love the story behind this recipe: a reader wrote to Pille after she'd heard a story on National Public Radio about a particular zucchini and smoked cheese soup, a popular Estonian pub dish. In the comments on the original post, someone suggested substituting smoked Cheddar for the Estonian smoked cheese; I think Dutch gouda would be good, too.
