Slow Cooker Soup: Easy creamy low-fat tomato basil soup, from 365 Days of Slow Cooking

A couple of weekends ago, we planted our annual herbs -- including a row of robust Genovese basil plants -- and roma tomatoes in our garden, and right away I put this low-fat tomato basil soup recipe from 365 Days of Slow Cooking on my list to try. The recipe includes ravioli, to make it hearty and kid-friendly; omit the ravioli to lighten it up. Use good-quality canned tomatoes, or wait a few weeks until your own tomatoes ripen. Tomato and basil, and some Parmigiano-Reggiano cheese on top -- what could be better?
