Seven soups every Saturday: watercress soup recipes
In a year when I've promised to eat more kale, it's no surprise that I'm also drawn to recipes for watercress, as it's a cousin of kale and collard greens. A peppery perennial herb, watercress grows along the edges of streams or marshes, and the edible leaves are harvested before the plant flowers. Watercress might be best known for its inclusion in fancy little tea sandwiches, but the slightly mustard-flavored leaves also transform into hot or chilled soup, elegant or more rustic.

I love watercress, and I don't think I've ever cooked with it, not even once.
Kalyn, now that I know watercress is related to kale, I'm certainly going to cook with it more often. This is my eat-more-kale year.
