Seven soups every Saturday: gazpacho recipes

Correct me if I'm wrong, but I believe that people who don't like chilled soups should make an exception for gazpacho, the raw vegetable-based soup that originated in Andalusia, the southernmost region of Spain. Gazpacho transports you to the warm, sunny-baked Mediterranean climate, where the idea of cold soup, made with garden-fresh vegetables, feels so right. Most, but not all, gazpacho begins with tomatoes and garlic, something -- bread or nuts, depending on whether you want a gluten-free version -- to thicken, and good olive oil. Healthy and refreshing. And, yes, chilled. Even if you don't like cold soup, I hope you'll try gazpacho this summer. Just try it.

My favorite is still right here on Soup Chick, Lydia's watermelon gazpacho. I recently made it with mango, working with your recipe, which was almost as good.

I have been making the same recipe for Gazpacho for years. It is from an old NYTimes Soup cookbook. It includes consomme which gives the soup body as it chills and adds a subtle flavor. Give it a try.

Susan, thank you so much. I'm partial to that watermelon gazpacho, too, especially as the weather heats up.

Janet, I've never tried adding consomme. What an intriguing idea!
