Slow Cooker Soup: Crockpot chicken enchilada soup, from Skinnytaste

Are you planning a Cinco de Mayo party? If so, add this delicioso chicken enchilada soup from Skinnytaste to your menu, and let the slow cooker do the work while you're working on the rest of the meal. Or, make a pot of soup on the weekend, and freeze in smaller portions for weekday lunches. Though "skinny" in terms of calories and fat, this soup fills you up with real Mexican flavors, from cilantro, chipotle chiles in adobo and black beans. Ole!

Sounds wonderful -- I swear I need a small slow cooker so I can try some of this recipes.

Kelly, I put off buying a slow cooker for years, and now I can't imagine why. They are so inexpensive, especially the small ones. I'd start with a 4-quart oval, which is the one I use most often for soup.
