Seven soups every Saturday: chilled vegetable soup recipes

Memorial Day weekend signals the start of the summer season. Out come the white pants, in go the tomato plants. Entertaining moves outdoors, and the food moves from hot to cold. It's no different in the soup world. And there's more to chilled soup than vichyssoise.

For some reason, I don't like cold soups. However, I would probably make one just so I could take a photo like yours!!!

Today is nice and warm out so I could definitely use a bowl of cold soup. I made a cold Indian spiced cucumber soup last summer for the first time and it was so good. Pinning this for future reference!

Pam, I know people have strong feelings about chilled soup. Maybe one of the recipes here will change your mind.

Jeanette, it's warm and muggy here, too, and I'm thinking about whipping up some gazpacho.

Several of these sound perfect to me, but I would start with cucumber and avocado!
