Seven soups every Saturday: potato soup recipes

5113001961_26969ef8cf

What's more budget-friendly than potato soup? And what's more belly-filling than potato soup? Potato soup gets a bit of a bad rap, for being bland and boring. Oh, how wrong that is! Think of potatoes as the foundation for any add-ons, mix-ins, herbs or spices, bacon or clams, chicken or cheese. You can purée the potatoes for a thick soup, or leave them chunky in a skinny soup, or smash some of them against the side of the stock pot with a wooden spoon to get just the texture you want. What's not to love?

Seven potato soup recipes caught my eye this week:

Buttermilk potato soup with bacon and roasted jalapeno, from Homesick Texan

Spinach, potato, dill and carrot soup, from My Colombian Recipes

Cheddar and ale soup with potato and bacon, from Brown Eyed Baker

Roasted garlic and potato soup with parmesan, from FamilyStyleFood

Spicy potato and fennel soup with parmesan bagel croutons, from Cookin' Canuck

Roasted potato soup, from The Food in my Beard

Arugula and potato soup, from Jeanette's Healthy Living

Find more delicious potato soup recipes on Food Blog Search. Come back every Saturday for seven soup recipes to enjoy any day of the week.

Potato soups get a bad rap for being bland? Since when? -8-)

These look especially good.

CJ, nothing bland here! I love to use potato as a base of all types of aggressive flavorings.

Oh yes, how I love a good potato soup. There are so many good ones to try in this list. Thanks so much for including my potato and fennel version!

I've been waiting for a good potato soup -- and all of these are inspiring. I made the Spinach, Potato...and Carrot as a base, with kale and broccoli needing to be used for the green, likewise some whey... not the same soup, but a great starter that I can go back to over and over.
Cooking, always a work in progress!

Cookin' Canuck, I love your soup with fennel, and I hope you find a few other variations to try here.

Susan, what I love about soup is that even following a recipe, you'll never make it exactly the same way twice. And what you come up with often is better than the original. Keep experimenting!
