Seven soups every Saturday: leftover turkey soup recipes
I know, I know, you haven't even cooked your Thanksgiving turkey yet. If, like me, you haven't bought your turkey yet, it's not too late to factor in an extra pound or two, to ensure you'll have plenty of leftover turkey for soup. Most any soup you make with shredded chicken can be made with turkey, and there's the added bonus of a roasted turkey carcass to create a richly flavored stock. Don't forget the leftover stuffing -- turn it into giant "croutons" for your soup.

I always look forward to making turkey soup right after Thanksgiving dinner. I just throw the carcass right into the pot with carrots, onions, celery and whatever herbs I have left. One of my favorites is turkey congee the day after Thanksgiving for breakfast.

I love homemade soup.
I always look forward to making soup from the leftover turkey carcass. Soup is the perfect remedy to the rich and abundant Thanksgiving meal. One year I had a traditional turkey and a smoked turkey. Two soups. One the tradtional tureky noodle soup, the other a lentil and smoked turkey soup. Enough to freeze and share.
I'm building up my supply of turkey stock as I write. Need some for making the stuffing and gravy. You can't have too much gravy, can you? If you do, make soup!
