Seven soups every Saturday: garlic soup recipes

Several years ago, my friend Marcia, who used to live up the road from me before moving to New Mexico, gave me some seed garlic. Plant it in the garden in the Spring, she instructed me, and dig it up at the end of Summer. Well, that garlic has been in the garden all this time. In June it puts out pungent garlic scapes, and in August, large purple flowers. I have yet to dig it up, so perhaps by now the heads of garlic are the size of small boulders. I'm a bit afraid to look.

My mother made the great leap from Betty Crocker to Julia Child with garlic mashed potatoes. The classic garlic soup is another winner.
