We often hear the phrase "Spring chicken", but seldom in connection with actual chicken. I'm no Spring chicken, that's for sure. I'm no Spring lamb, either, but lamb is the meat I most associate with this time of year. And, more and more, I love its slightly-lighter-than-beef flavor in soups and stews. If you live near a Middle Eastern or Mediterranean community, one that features lamb in the cuisine, you'll find beautiful cuts of lamb at local butcher shops. Rhode Islanders can look for Don Minto from Jamestown's Watson Farm, at the Coastal Growers Market.

I have been using a lamb bone (when I have one which is rarely) in my pea soup instead of a ham bone for years. Makes a delicious soup
